You have to have a really HOT fire right under it. I use charcoal. Yes, I'm a charcoal snob! It gets really hot, as it should. It's HEAVY as it should be. The cooking surface is not smooth so food will stick. Once it gets really hot again, after adding food, you can scrape off the stuck bits with a metal spatula, getting all that great flavor into the food. Even with the food sticking it was surprisingly easy to wash after cooking. Not sure how they expect you to get all the food and liquid out after cooking if you are not supposed to take it off the grill when hot, as the instructions state. Just use heavy oven mitts and take it off. It's not that hard. I am very happy with the wok!
